Cook the ravioli or tortelloni from a frozen state. Bring water to a boil in a large diameter pan. When the water boils add salt and turn the heat down to a simmer.
Drop the ravioli or tortelloni into the pot and let simmer until they float to the top (about 5 to 6 minutes). Remove the ravioli or tortelloni from the pot with a slotted spoon; do not drain into a colander. Sauce them and serve immediately. |
